WINEMAKING covers the processes of transformation of the grape into wine - red, white or rosé -, from reception of the harvest, to alcohol fermentation, including clarification, pressing, aging and assembly and right through to bottling. This activity can be carried out by different structures: agricultural co-operatives, winemaking centres, industrial wineries or individual wineries.
